thai iced coffee and thai iced tea serves 6-8
Sweet, cold, and spiced with the delicious flavors of vanilla, star anise, and more, Thai iced coffee and iced tea used to be one of my favorite things about going out for Thai food. Then I found out how easy it was to make it myself at home. You can buy big bags of Thai coffee and Thai tea at a good Asian market.

1/4 cup Thai coffee powder or ½ cup Thai tea
1/3 - 1/2 cup sugar
ice, crushed
half-and-half, or cream

Place a filter in your electric drip coffee maker and add the coffee or tea. Fill the coffee pot with water to the 8 cup mark, and pour into the appropriate part of your coffee maker. Turn on the machine and let it brew. Once brewed, add the sugar (adjust amounts to taste – Thai coffee/tea is generally quite sweet, but as I generally find the caffeine alone more than sufficient to make me scary-peppy, I like to go easier on the sugar) and stir it up to dissolve. Let it cool, then transfer to a serving pitcher and refrigerate. Serve over crushed ice, and float a good amount of half-and-half in each glass.

mint iced tea serves 6-8
6 tea bags
10-12 mint sprigs
2/3 cup sugar
lemons and limes for garnish

Bring 5 cups water to a boil, then remove 1 cup. Brew the tea bags and mint sprigs in the remainder for 30 minutes or so. Meanwhile, make a sugar syrup by dissolving sugar in the reserved cup of water. Remove the tea bags and mint once you have a good, strong tea. Add another 3 cups of cold water (or to taste), along with the simple syrup. Refrigerate and serve with ice; garnish with lemon and lime slices if desired.

1 orange mint tea – add orange juice to taste
2 lemon mint tea – add lemon juice to taste
3 honey mint tea – substitute the simple syrup with honey added to taste
