The difference between white rice and brown rice is that brown rice has an intact outer bran layer.  This layer is chock full of good-for-you nutrients and gives the cooked rice a chewier texture and nutty flavor. But because the bran layer also keeps water from soaking up as easily during the cooking process, brown rice has slightly different cooking requirements than white rice. The key to proper brown rice is actually pretty simple: use the same method as you do for white rice, but cook longer and with more water. Increase the water to rice ratio to 2:1 if you like a fairly firm rice, 2.25:1 for a softer, more moist rice. Cook for 40 minutes.
