dill
The feathery green leaves of the dill
plant have an assertive flavor that disappears quickly when cooked, so add fresh
dill at the end of cooking time (dried dill, on the other hand, can be used
successfully in roasts, breads and the like). Use dill sparingly, however, as it
can very easily dominate a dish. Dill’s fresh, summery flavor is perfect in
salads, marinades, dressings and dips, and pairs particularly well with fish
(notably salmon) and cucumbers.
