6 When
the meat’s done marinating, stir 2 tsps. cornstarch into the meat and
mix well |
7 Now
add a cup of cooking oil to a wok and heat on high. When a pinch of flour
tossed in sizzles, the oil’s ready. Slide
in half of the meat mixture and fry until the meat turns color. No worries
if there’s still a smidge
of pink in the middle, as you’ll re-cook the meat later; when it’s just
about browned all over, fish it out with a slotted spoon, shaking out
as much of the oil as you can. Set aside on a plate, and fry up the remaining
meat.
8 Carefully
pour out the oil from the wok (into an old glass jar; you can collect used
oil in the jar till full, then discard). Add the broccoli to the wok, along
with
2 Tbsp. of water. Sprinkle about a ½ tsp. of salt. Stir-fry for a minute,
then cover, reduce heat to medium, and cook for another 3 minutes or so until
crisp-tender. Taste and add more salt as needed. Transfer to a big plate.
9 Add
1 Tbsp. of oil to the wok and return heat to high. Stir-fry the scallions
and ginger for a minute or so, until fragrant. Pour in the sauce and stir;
cook for another minute. Now transfer the meat back to the wok (try to
avoid pouring in the extra oil that might have collected in the plate). Stir
well to coat the meat, and cook until the meat’s reheated.
Arrange the beef over
the broccoli, and enjoy! |
