how to cook perfect crepes

Sweet fixings |
Sweet crepes are perfect for breakfast, brunch or dessert. You can fill and top them with just about anything you’d use to dress up pancakes, and more …

1. Spread with jam, maple syrup, chocolate sauce, Nutella.
2. Build an ice cream sundae on top of crepes.
3. Lemon crepes (my personal favorite): Sprinkle with fresh-squeezed lemon juice and sugar.
4. Butter and sugar crepes: Brush with melted butter and sprinkle with sugar.
5. Fill with fresh fruit.
6. Banana-Rum crepes with chocolate sauce

Salty Stuff |
Think of crepes as the French version of Mexican tortillas, or those pancakes used for Moo shu pork in Chinese cuisine. Suddenly, the idea of salty crepes doesn’t seem so strange, does it? You can fill crepes with just about any salty filling imaginable, and eat as is or top off with a sauce. Just follow the basic crepe recipe but leave out the sugar. A few ideas to get you started…

1. Sautéed ham and cheese, good and melty
2.
Scrambled eggs, with veggies, meat and/or cheese
3. Sautéed
veggies with tomato sauce
4.
Cooked seafood in white sauce
5.
Mushroom and spinach crepes with béchamel sauce

Just can’t decide how to dress up those crepes? Set up a crepe bar and play around with different combos. Get creative, have fun and bon appétit!
