Quick Fix | Sushi Rice 
This is a very basic recipe for sushi rice ... use it for nigiri sushi, maki (rolled) sushi, or eat it in a bowl with some veggies sprinkled on top. 

ingredients
2 c. rice
2 c. water
1/4 cup rice vinegar
1/4 cup sugar
1/2 tsp. salt
time 20-30 min
serves 3-4


1. Cook the rice in a rice cooker, adding water to the 2 cup mark. Alternatively, add rice and water to a pot; bring to a boil on the stove; cover and reduce heat to low. Cook for 20 minutes.
2. Let cooked rice cool. To help it cool faster, break it up and toss it around with a rice paddle.
3. Heat the vinegar on medium and stir in the sugar and salt. Warning: keep you nose away from the pot … the vinegar fumes will sting if you inhale.
4. Gradually spoon vinegar mixture into rice, stirring well to coat the rice. Taste,  and add a few more sprinkles of salt if necessary. Let the seasoned rice cool.
