tasty morsels |  Marinated Mozzarella Balls with Plum Tomatoes

It is imperative that you use fresh mozzarella for this recipe – the stuff that comes packaged in water, not the string-ey stuff you use to top off pizza. Trader Joe’s carries fresh mozzarella balls (bocconcini) which, when halved, are the perfect size; if you only find the large (lemon-sized) balls of fresh mozzarella, cut those down into little chunks.


ingredients

9 mozzarella balls
2 large plum tomatoes
2 tbsp. fresh basil
olive oil
salt
pepper
18 toothpicks

yield makes 18, serves 6

How filling is it? pretty insubstantial; you can leave the mozzarella balls whole to make each bite more filling
time
 
10 min, plus 20 min+ marinating time


1. Slice the mozzarella balls in half. (Or, if you're using large mozzarella, cut it into bite-size chunks)
2.  Core and de-seed the tomatoes. Roughly chop the tomatoes into ¾" chunks.
3. In a bowl, combine the mozzarella, tomatoes and basil with olive oil, salt and pepper to taste. Let sit for at least 30 minutes.
4.  To assemble: spear a tomato chunk and mozzarella chunk on a toothpick. Continue until you’ve run out of mozzarella (or tomato). Sprinkle with more basil if desired.
