tandem cooking, a summer menu for two: 
Coconut Rice  
Don’t let the coconut fool you … this isn’t a dessert rice. The coconut milk lends a fantastic aroma, and the slightly sweet, creamy texture is a good balance for spicy foods.


ingredients
2 cup long-grained rice
2 cans coconut milk
salt
time 
20 minutes

serves 4

In a medium saucepan, combine coconut milk with  long-grain rice. Sprinkle several dashes (5 or 6) of salt. Bring to a boil, then cover and cook on medium-low for 20 minutes.
