quick fix : 
Banana-Rum Crepes 
Crepes make for an impressive dessert and are much easier to make than you might imagine. Crepes keep well in the fridge for several days, or in the freezer for several months, so if you're entertaining guests, just make up a big batch ahead of time and you can whip up this dessert in a snap.


ingredients
2 large bananas
1½ tbsp. butter
2 tbsp. rum
1-2 tsps. brown sugar (to taste)
4 crepes
time 
5 minutes + cooking time for crepes

yields 4 crepes, serves 2

1. Slice up the banana into thin pieces, approx. 1/8" thick. Reserve a dozen or so slices for garnish.
2. Heat the butter on medium-high in a saucepan and let it melt. 
3. Add the bananas, rum and brown sugar. Stir gently and cook for several minutes, until the alcohol has evaporated and the bananas are good and soft.
4. Fill crepes with the banana mixture and roll. Drizzle with chocolate sauce if desired, and sprinkle with banana slices. Serve.
