As for cooking the beans, I’m of the opinion that the best tasting bean is one that is only slightly cooked. Perfectly prepared green beans should be tender, but still with a hint of crispness. Overcooking green beans will leave them mushy, gray and not unlike the stuff you’d find in a can.
