A night at home with your closest friends
doesn’t have to mean pizza, a greasy chicken bucket or potato chips.
Spicy chicken bites or a batch of soft potato wedges are a breath of
finger-licking-good fresh air.
cajun chicken bites
1 lb boneless chicken breast
1 Tbsp fresh thyme (1/2 Tbsp dried thyme)
1 Tbsp black pepper
1 Tbsp garlic powder
1 Tbsp white pepper or cayenne pepper
1 Tbsp oil
3 Tbsp soy sauce
2 Tbsp corn starch
˝ cube (1/4 cup) of butter
Serves 2-3
1 Cut the chicken
breasts into 1 inch squares or ‘bites’ and mix them with the soy sauce
and corn starch in a large bowl. Set in the refrigerator for 30 min.
2 Melt the
butter in a sauce pan on the stove. Mix in the pepper, cayenne pepper
(or white pepper), garlic powder and thyme to create a paste.
3 Retrieve the
chicken from the refrigerator and brown them in a skillet with the oil.
Once they are browned, pour and mix in the Cajun paste. Continue
stirring until the chicken bites are cooked through. Serve with
toasted flat bread.
parmesan
and thyme potatoes
6 large potatoes, peeled and quartered into wedges
1/3 cup grated parmesan cheese
1 Tbsp fresh thyme (1/2 Tbsp dried thyme)
1 cup flour
1 Tbsp garlic powder
cooking spray
Serves 4
1 Preheat your
oven to 350 F or 180 C.
2 Spray the
potatoes with cooking spray.
3 Place all
the remaining ingredients in a paper bag. Add the potatoes and shake to
mix.
4 Set the
potatoes in a 9”x13” pan and spray lightly over the top once more. Cover
with foil.
5 Bake for 45
minutes, then remove the cover and bake for 15 minutes more or until the
potatoes look browned.
