easy breezy bruschetta by Sunny Giron | 1 2 3 continued from page 1 smoked salmon,
cream cheese & dill Start by spreading the cream cheese, then follow with the salmon. Dress each piece with desired amount of dill and capers. Assemble all pieces on a tray and squirt with fresh lemon just before serving. This recipe is also great with anchovies or bay shrimp in place of the smoked salmon. Wine companion: Bethel Heights 2002 Pinot Noir, Oregon $14 - $16. Or instead of wine serve with a dry vodka martini.
Before the bread is fully toasted, sprinkle with asiago and toast for the last 1 - 2 minutes, then layer with arugula and pepper. Wine companion: Bonny Doone 2002 Ca'Del Solo Big House Red, California $9 - $10. *You can find roasted red pepper in a jar in the condiment aisle of most grocery stores. Or you can buy a fresh pepper and roast it by placing it on a cookie sheet and popping it in the oven at 475F. Roast for about 10 -15 minutes, or until the skin looks charred. Once it's cool to the touch, the skin should peel off easily under cold running water.
