a fizz and a pop
bubbly cocktails to ring in the new year

Whether you’re getting ready to host a grand year-end gala or spending New Year’s Eve with your honey or a couple of good friends in quieter style, usher in 2007 with some sparkle and fizz and pop – with these bubbly-based cocktails.

kir royale
A perennial New Year’s Eve cocktail favorite…

1/2 oz. crème de cassis
chilled champagne or other sparkling white wine
lemon twist

Pour crème de cassis into a champagne flute; top off with champagne. Gently stir. Garnish with a twist of lemon and enjoy.

black velvet
Guinness and champagne might sound like an odd combo, but this one’s a classic. A good choice for a less formal New Year’s party, where you want something festive but not too hoity-toity.

1 oz. chilled Guinness
4 oz. chilled champagne or other sparkling white wine
lemon twist

Pour the Guinness into a champagne flute; top off with champagne. Garnish with a lemon twist and start sipping.

bellini
A true Bellini uses fresh white peach nectar – made from peeled ripe fruit, pureed, watered down and then sweetened to make a lovely thick liquid. As getting your hands on good quality white peaches this time of year can be near to impossible, take the easy way out and buy readymade peach nectar instead. Purists might turn up their noses at this shortcut, but trust me: it’s still very tasty.

1 oz. peach nectar (preferably white peach)
prosecco (Italian sparkling wine) or other sparkling white wine

Pour the peach nectar into a champagne flute; top off with champagne. Gently stir to combine. If you like, you can also garnish with a small strawberry or sprig of mint.
