A perennial New Year’s Eve cocktail favorite…

de cassis into a champagne flute; top off with champagne. Gently
with a twist of lemon and enjoy.
Guinness and champagne might sound like an odd combo, but this one’s
a classic. A good choice for a less formal New Year’s party, where
you want something festive but not too hoity-toity.
1 oz. chilled Guinness
4 oz. chilled champagne or other sparkling white wine
Pour the Guinness into a champagne flute; top off with champagne.
Garnish with a lemon twist and start sipping.
A true Bellini uses fresh white peach nectar – made from peeled ripe
fruit, pureed, watered down and then sweetened to make a lovely thick
liquid. As getting your hands on good quality white peaches this
time of year can be near to impossible, take the easy way out and
buy readymade peach nectar instead. Purists might turn up their noses
at this shortcut, but trust me: it’s still very tasty.
1 oz. peach nectar (preferably white peach)
prosecco (Italian sparkling wine) or other sparkling white wine
Pour the peach
nectar into a champagne flute; top off with champagne. Gently stir
to combine. If you like, you can also garnish with a small strawberry
or sprig of mint.
