Dinner for two – Leftover fried rice Yay for the homemade chicken stock I made two nights ago! I always forget how much tastier it is than the canned stuff. I make some egg drop soup to go along with the leftover fried rice. Note: I’m still alive. With no complaints from the digestive system. The chickpea gamble paid off. DAY 7 Lunch for two – Chicken rice soup [stock from two days ago, leftover rice, leftover chicken] Yeah, it’s still in the 80s outside, but it’s supposed to be fall, dammit, and I’m going to pretend it’s soup weather. Delusion tastes good. I heat some stock in a small pot, then add a bit of leftover rice and shredded scallion chicken for a nice bowl of chicken rice soup. Dinner for two – Ah, my old stand-by: roasted red pepper sauce. Contrary to what my old college friend Vin thinks, this is NOT the only dish I know how to make, though admittedly, it makes its way into my cooking rotation pretty frequently. It tastes better with a higher pepper to tomato ration, but still makes for a perfectly good meal as is. I’ve even got a little bit of sauce leftover … probably enough to feed me for lunch tomorrow. o o o o o Okay, so we caved once, unable to resist the siren call of fluffy buttermilk pancakes at midnight. But barring that minor indiscretion, I haven’t felt the least bit restricted by our self-imposed $50 budget. We’ve eaten well, and plenty too. By week’s end, I’ve still got plenty of chicken stock, and at least another serving or two of fried rice. The fridge is in need of veggie-replenishment, but the cupboards are still very well-stocked with rice, pasta, and other essentials. In fact, I’m guessing that next week, I should be able to get by with a mere $30 spent on fresh groceries for two. o recipes
