nordic nosh
winter dishes, Scandinavian style: part one

by Kiera Tara O'Brien | 1 2 3

Two weeks ago, we featured the first part of our winter nordic feast. This week, the Scandinavian nosh ideas continue, with a sea-inspired menu...

Apart from skiing, Norway is best known for its many fjords -- narrow inlets of water that cut into the rugged coastline. Some fjords and their valleys can be miles long and are surrounded by steep, inaccessible cliff faces. Before the advent of cars and trains, taking a boat from fjord to fjord was the easiest and safest way to keep contact with neighboring communities. Unsurprisingly, Norwegians grew to depend on seagoing transportation and the exploitation of coastal resources. Nearly every meal in a Norwegian household, from ancient to modern times, features one or two seafood dishes. Take to the high seas with this full-on ocean themed menu of Nordic classics!

menu 2 sjømat: seaside flavors
Brød: Norwegian Land Bread
Fiskesuppe: Fish Chowder
Fisk: Smoked Salmon Quiche
Agurk Salat: Fresh Cucumber Salad
