step 3. for scrambled eggs: Let the egg begin to set slightly, then break it up with your spatula. Toss the scrambled bits around in the pan until the egg is cooked through. add cheese, if desired, in the final minute or so of cooking. sprinkle salt and pepper to taste.
for an omelet: When the egg begins to set slightly, gently lift up the edges of the egg using your spatula, and push towards the center. Rotate and tilt the pan so that the uncooked egg runs out to the edges and cooks. After a few minutes, when the center is just slightly moist, spread your cooked leftovers on one side of the omelet; sprinkle with cheese if desired. Carefully fold the omelet in half or thirds. Serve on a plate.
for a frittata: Let the mixture cook undisturbed, until the bottom is well-set (about 10 minutes). Transfer the skillet (you did remember to use a cast-iron one, didn’t you?) to a preheated 350°F oven; bake until the top is cooked-through and just beginning to turn golden (10-15 minutes). Slice into wedges and serve in the skillet, or transfer your frittata to a plate.

2. Burritos/Roll-ups
Burritos and roll-ups are a terrific way of using up the many different leftovers you may have lurking in your fridge. Combine that smidgen of sautéed bell pepper with that last bit of rice and beans, or mix that leftover roast chicken with some refried beans and yesterday’s salad, then roll it all up in a yummy tortilla.
Ideal candidates | cooked veggies, grated cheese, deli meats, cooked meats, sausages, leftover salad (without dressing added), cooked beans, cooked rice
Necessary materials | tortillas, large skillet
Basic recipe (serves 2) |

step 1: Place a large tortilla in a skillet and heat on medium
step 2: Spoon the leftovers in a strip down the center. Let cook for a couple of minutes. Add cheese, sour cream, salsa, guacomole if desired.
step 3: Roll up the tortilla by folding over each of the sides using a spatula. Carefully flip the burrito over and let cook for another couple of minutes. Slide onto a plate and enjoy.
